After a long hiatus, I have changed my blog name and plan on flooding you with new food porn.
I’m starting with what I made for dinner tonight.
Vegetarian taco rings.
The original recipe I found was for a fully vegan version, but I love cheese. Real cheese. Oooey gooey cheese. So I made a vegan version and a non vegan version, but it can be made for meat lovers and vegan diets, its just easy substitutions.
1/2 Package Boca Crumbles or aprox 1 cup crumbled soy burger
1 cup cooked rice
Shredded mexican cheese (I also used vegan pepper jack cheese)
2 8 oz pkgs. refrigerated crescent roll dough
Crumble the meat, rice, and corn into a frying pan.
Before turning on the heat, mix the mixture together well with your hands
Set aside ‘meat’ mixture while laying out crescent roll dough.
To make a ‘ring’: Arrange crescent triangles in a circle on a 13” baking sheet, with dough triangle bases overlapping in center, and points to outside (there should be a 3-inch diameter circle in center). Spoon meat mixture in a circle over dough , cover with cheese. Fold points of triangles over filling and tuck under base at center
Bake at 375 for 20 to 30 minutes or until golden brown.
Garnish with whatever goodies you like
Serve in wedges and add more toppings if you want. Yum!
